Cerviche

Ever since arriving in the industrial seaport of Esmeraldas, I've had difficulty thinking of any food other than cerviche. From the restaurant next to the Kennedy hotel I can see the cranes to lift the large containers onto the ships. With all the industry, I am amazed at the freshness of the camarones I eat. Lime, cilantro and the plumpest, freshest shrimp is what I'll miss when I return to the States.

This is sooo delicious! I lived in Ecuador for years and can't get enough of there ceviche. I'm going for a visit with my tax return money in a few months! I will have some of this with some chifle.


The photo is awesome. I really love shrimps. It's my favorite food.
